ORGANOLEPTIC CHARACTERISTICS:
Color: ruby red with garnet highlights.
Bouquet: elegant, with a good intensity with flavors of berries, spicy, with a light vanilla note.
Taste: structured, balanced, elegant.
Sensations of licorice and cocoa are perceived at the aftertaste. Conservation: suitable for long aging.
Serving temperature: 18-20 ° c.
Suggested pairings: the great wines help to meditate and accompany any dish. Excellent with aged cheeses and with red meat and game dishes
TECHNICAL FEATURES:
Grapes: 100% Barbera.
Alcohol: 14.5% vol.
Origin of the grapes: Agliano.
Land: silty with a high percentage of limestone.
Average age of vineyards: 40-50 years.
Production per hectare: 65 q of grapes, equal to 43 hl of wine.
Vinification: traditional with prolonged maceration carried out with pumping over and fulling.
Fermentation temperature: controlled at 30 °.
Duration of maceration: 15 days.
Aging: maturation in 225 liter barrels of Allier first and second passage for 22/24 months.
The malolactic fermentation takes place in the wood during aging.
